4th of July Pie
Who doesn’t love a refreshing, sweet, holiday dessert – especially if it’s a 4th of July pie?! My sweet tooth sure does – and I love trying new recipes over holidays because… it’s fun!!
I wanted something RED, WHITE & BLUE, for obvious reasons. I set out to the store with the idea to make something with blueberries, strawberries and angel food cake, but when they were out, I changes gears a tad.
This is what I came up with… and it tastes DELICIOUS. While it’s not something I’ll dote as “healthy,” it IS surely a healthier option than many (many) desserts out there. Plus packed with tons of nutrients from a LOT of berries.🍓
4th of July Pie!
* 8oz. package of Greek cream cheese (I used Green Mountain Farms brand)
* 2/3 of a 10oz. tub of Whipped Topping (I used Skinny Truwhip)
* 1/5 package Cheesecake pudding mix (sugar free, dry mix, 0.2 o
* 1/4 cup Unsweetened Almond Milk
* 1 pint Blueberries
* 16oz. container Strawberries
* Graham cracker crust
— Mix pudding mix & milk together until forms pudding (about 30 seconds).
— Microwave cream cheese (about 20 seconds) to soften.
— Mix the cream cheese into the pudding until smooth (I used a whisk but an electric mixer would work much better😍).
— Slowly add the whipped topping and blend together.
— Chop 2/3 of the strawberries and mix into the filling mixture. Also stir in 2/3 of the blueberries.
— Put in pie crust & top with remaining strawberries and blueberries.
