Cucumber Avocado Salad
This is one of my favorite things to eat. It’s refreshing, so stinkin’ healthy, and quite delicious. You can mix up what ingredients you use (i.e. you might like tomatoes in it … but I don’t usually mess with tomatoes as I’m not a big fan). It’s pretty simple, filling and an awesome side (or snack!). Hello, Cucumber Avocado Salad!
CUCUMBER AVOCADO SALAD
* 1/2 English Cucumber
* 12 Baby Carrots
* 1/4 Avocado
* 2 Tbsp. Feta
* 2 Tbsp. Light Balsamic Vinaigrette
— Chop the cucumber & carrots.
— Add avocado & feta (or Goat cheese if you prefer).
— Top with dressing (I’ve also been using a Ginger Soy dressing I found… and this is also a delicious way to fix this salad!)
This recipe is for one huge bowl – you can adjust as needed to feed the mouths you’re feeding!
