Roasted Veggies & Turkey Burgers
I am a HUGE fan of veggies, so if you’re with me (and just obsess over delicious vegetables), I know you love roasted vegetables too. It had been a while since I’d made them roasted, so I thought I’d share how I made them, because they did turn out yummy! I also love turkey burgers, so this meal of Roasted Veggies & Turkey Burgers was one I was very happy with. I don’t think the picture gives this meal much justice (I need to work on my photography skills!), but it really was GOOD!
ROASTED VEGGIES & TURKEY BURGERS
* 1 package of 93% lean ground turkey
* 1 large (it was huge) zucchini squash
* 10 baby potatoes
* 7 mini pearl onions
* 1 Tbsp. Olive Oil
* 1.5 slices Havarti cheese (I used Boar’s Head brand)
* 1/2 Avocado
* Salt & Pepper
* McCormick Brown Sugar & Bourbon seasoning (optional)
— Preheat oven to 425º.
— Cut up the zucchini, potatoes and onions (you can choose any veggies you want in any quantities, just adjust the olive oil to suit). Put in a large bowl and mix with 1 Tbsp. olive oil. Once mixed, put on a baking pan and season with salt & pepper. Put in the oven and bake for 40 minutes (stirring every 10 minutes or so). You may want to cook them longer, or you may like their consistency before 40 minutes. Your call 🙂
— Make 4 patties out of the ground turkey (I used the other 2 turkey burgers later in the week in this recipe). Justin loves the McCormick Brown Sugar & Bourbon seasoning so I used a little of this to season them. Cook on a skillet with nonstick spray.
— Once the veggies & the burgers are done, it’s just finishing touches… top your burger with cheese (I used a whole slice on Justin’s and a 1/2 slice on mine) and avocado.
